CIEH Level 1 Awards in Food Safety

These qualifications have been developed to raise awareness of key food safety issues and to provide employees with an induction to food hygiene, prior to undertaking the Level 2 Award in Food Safety.

Who needs this qualification?

The CIEH Level 1 Awards in Food Safety provide an ideal solution to staff induction training including:

  • new employees with minimal or no prior food safety knowledge;
  • employees handling low-risk or wrapped foods (category A);
  • front of house employees, such as waiting or check out staff;
  • back of house employees, such as kitchen porters or warehouse staff.

The Level 1 awards are also suitable for employees for whom English is a second language or those with special needs.

Why is this training important?

Food business operators must ensure that employees are supervised, instructed and trained in food hygiene matters in order to guarantee safe food to consumers.

Anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.

Prerequisite: Recommended understanding and knowledge of basic food hygiene – ideally the Level 2 Award in Food Safety taken within the last three years. Candidates who have already achieved the CIEH Level 3 Award in Implementing Food Safety Management Procedures need only attend two of the remaining units of training and pass the multiple choice question examination to gain this award.

Food Allergies

On the 13th December 2014, the EU Food Information for Consumers Regulation (EU FIC) enforced under the Food InformationRegulations 2014 require food businesses to provide complete and correct information for 14 allergenic ingredients to customers.

These regulations apply to all catering and retail businesses that serve or sell loose foods.

Training in how to comply with these new regulations and to reduce the risk of allergenic hazards is important.
